The tubers of the plant that remain under the ground are known as “potatoes”. Since these tubers are rich in starch, they are an important nutrient. In addition to starch, potatoes also contain a certain amount of protein; starch is 20%, protein is 2%. Its nutritional value is 90 calories. Although there are poisonous alkaloids in the upper parts of the plant, its tubers are not poisonous. However, since these alkaloids are formed in germinated potatoes, they cause poisoning. Starch grains in potato tubers are in egg or pear shape and consist of grains of 70-100 microns in size. Potatoes are divided into yellow and red according to the color of the outer skin, and white and yellow according to the flesh. Potato seed is called milva. It is especially cultivated in Niğde province.
